Fallow deer sausages ( naturally matured without preservatives ) The Fallow deer (Dama-Dama) are small size deer that we meet in Rhodes, Limnos and Bourazani in Greece. Their muscle fibres are short and tender compared to the ones of the larger deer (met in Parnitha and
Northern Europe –“Cervus elaphus”) which are long and tough. After the meat inspection and approval we conduct blood tests to safeguard our products against Brucellosis. We then add a mixture of herbs and finally the meat is put into sheep intestine. The product stays 15-20 days in the maturation chamber. After maturation the product is packaged in special glass vases where the sausages-cut in pieces of 7cm length and 1cm diameter- are immersed in sunflower oil or are covered in wax and are preserved in a temperature of 2-4°C . This special packaging
offers the product a life of 4 το 18 calendar months. The product must be heat treated before consumption-this is clearly stated in the packaging (back label).
