Wild bore sausages ( naturally matured without preservatives) After meat inspection and laboratory test to ensure that Trichinella spiralis parasite is absent, we add a mixture of herbs and put the meat in pig’s intestine.
The product stays in the maturation chamber 15-20 days. Then it is packaged in special glass vases where the sausages, cut in portions, are immersed in sunflower oil or are covered in wax and finally are preserved in a temperature of 2-4°C. This special packaging
procedure offers the product a life of 18 calendar months.
The product must be heat treated before consumption-this is clearly stated in the packaging (back label).
In Bourazani of Konitsa – Ioannina, we have established, since 1990, the Environmental Park “Bourazani” which is located in an oak forest of 205 acres. Within this park we host 850 wild animals (elks, fallow deer, wild bores, wild sheep (mouflon), wild goats of Crete and a few staggies). The animals in the Park eat acorns during the autumn and winter seasons. Inside the park we have also built the “Bourazani Natural History Museum”. (www.bourazani.com) Every year, under the strict surveillance of the Park Veterinary Surgeon, we have to withdraw 50-80 animals to sustain the correct balance of the animal population (overweight bores, extremely wild fallow deer, animals with intense friction in their teeth etc.) By the end of 2008 we constructed a “special” building, in the place “Paleokipos” of the park, for the further process of those animals.
